• Good education in basic cookery techniques
• Supervision training would be desirable
• Elementary food hygiene certificate
• Basic college qualifications
• NVQ 1, 2 & 3 (Advanced Larder, pastry and butchery)

FOH Team & General Managers


Responsibilities for designated section ensuring statutory obligations are met and kitchen profit achieved. Advance preparation and delivery of menus on time in line with company brand standards. Contribution to design and development of new dishes.


Prepare & cook dishes on menus set by the company and head chef using the recipes provided.

Stock Control
• Maintain adequate section stock levels to meet the needs of the business & place orders with Head/Sous chef
• Check items against delivery notes and record & address shortfalls
• Maintain secure stock storage
• Minimise expenses by careful control of food stock

Cook, chill, label, store & rotate food, keeping required records and taking appropriate action where necessary to ensure compliance with HACCP procedures, food hygiene regulations & company policies

• Maintain high standards of cleanliness and hygiene practices in line with legal and company requirements
• Keep kitchen equipment clean and in good working order
• Report hazards and maintenance requirements to the head chef or sous chef

Training & Development
• Assist the sous/head chef in training when required
• Provide training & guidance to Commis chef on section
• Maintain up to date knowledge of food industry trends
